Today I prepared chicken puff pastry with chicken, rice, pancakes and champignons. Still, chicken puff pastry has its pros and cons.

Ready-made store-bought dough simplifies the cooking process, and the chicken turns out delicious - two big advantages.

But to prevent the pie from turning out dry, you need to try to fill it with a juicy filling. To do this, I increased the amount of sour cream for greasing the pancakes, and also added onions to all layers of the filling.

Let's prepare the products according to the list.

Boil the rice until done. I cooked in a slow cooker.

Wash the chicken fillet and chop finely. Chop the onion into half rings.

Fry the chicken with onions in oil, salt and add spices to taste.

Finely chop the champignons and onions.

Fry the mushrooms with onions separately from the chicken, add salt and pepper to taste.

Roll out one piece of puff pastry and cut out a circle, attaching a pan lid. We do not crumple the dough scraps and save them. I rolled out the dough directly on parchment, this requires less flour when rolling.

Transfer the dough piece to a baking sheet. Place rice and mushrooms for the first layer of filling. We take half of both.

Cover with a pancake and grease with 2 tbsp. sour cream.

Then we lay out the second layer of filling - chicken and onions along with the juice formed during frying.

From the second rolled out layer of dough, cut out a circle again; it should be 3-4 cm wider in diameter. Cut out a small circle in the middle of the dough.

We will need the rest of the dough later for decorations.

Cover the filling with dough. Press the edges of the dough and pass them with a fork so that they do not open during baking.

Brush the pie with beaten egg.

Cut out any flowers or leaves from the remaining dough and decorate the pie with them. Brush the pie with egg again and set to bake.

Bake the chicken at 180 degrees until golden brown, use your oven as a guide.

  • Sift 260 grams of flour onto a wide cutting board;
  • Make a well in the flour and cut 200 grams of chilled butter into it;
  • chop butter and flour;
  • Break 2 raw eggs with a fork and pour them into the flour mixture and mix the dough base;
  • in half a glass of cold water, stir a teaspoon of sugar and a quarter of the same spoon of salt, add a pinch of citric acid;
  • pour water into the base and knead elastic dough;
  • Divide the dough into two parts (one is a third larger than the other), wrap in film and refrigerate the balls.
  1. Pancake batter– you will need to bake nine thin pancakes from it. It can be kneaded according to this recipe:
  • Beat 5 chicken yolks with 3 glasses of cold milk;
  • add salt (1 teaspoon) and sugar (1 tablespoon) to the yolks and milk;
  • add 260 grams of flour to the liquid ingredients and mix the dough;
  • beat 5 egg whites and fold them into the dough;
  • Pour 50 ml of butter, melted in a water bath, into the mixture.
  1. Chicken filling

Describing the preparation step by step, we divide it into four stages:

  • finely chop 500 grams of boiled chicken meat;
  • melt 2 tablespoons of butter and fry 2 tablespoons of flour in it;
  • Pour half a glass of chicken broth into the sauce, pepper and salt it to taste;
  • mix chopped chicken and sauce and season the filling with fresh herbs.
  1. Stuffed rice with egg

The rice filling is prepared simply:

  • Mix 1 cup of boiled fluffy rice with one boiled egg, finely chopped;
  • season rice with egg with a spoon of melted butter and add spices to taste (salt, pepper, dried herbs).
  1. Mushroom filling

Mushroom filling can be prepared from either dry or fresh mushrooms. If you use dry ones, do not forget to soak and boil them in advance, after which, follow the recipe:

  • Fry 200 grams of fresh mushrooms in butter with one chopped onion;
  • Grind the mushrooms and onions in a meat grinder or puree in a blender;
  • salt and pepper the filling and, if it turns out to be a little dry, dilute it with a little chicken broth.

Now you need collect chicken made from puff pastry with three fillings. For this:

  • Grease a baking dish with oil and place on its bottom most of the puff pastry, rolled into a flat cake. Place the dough so that it hangs over the sides of the pan;
  • Place a third of the chicken filling on the puff pastry. Make sure that the bulk of the meat is mostly in the center;
  • cover the chicken filling with the first pancake;
  • Place a third of the rice filling on the pancake - also closer to the center;
  • Cover the rice with eggs with a second pancake;
  • fold the third pancake;
  • add mushroom filling.

Repeat all steps two more times. As a result, you will have a pie with nine layers (3 chicken, 3 rice, 3 mushroom). There will be a thin pancake between each layer of filling.

Place the second piece of puff pastry, rolled out into a circle, on top of this structure. Connect the dough that hangs on the sides with the dough that is on top - pinch the edges with a beautiful “rope”.

Make a small hole in the top center of the chicken pot. To do this, use a sharp knife. Do not throw away the dough itself, it will be needed to cover the hole. See the photo below to see how it looks on the finished pie.

Pour half a glass of chicken broth into the hole and cover with a lightly beaten egg.

All that remains is to bake the pie in the oven until golden and delicious.

Cooking steps:

  1. If the pancakes were not purchased in advance, then first of all you need to make the dough and bake 4 pancakes. While they are cooling, you can proceed to preparing the main dish.
  2. Since the kurnik filling is laid out in layers, each one should be kneaded in a separate bowl. The first layer will consist of finely chopped eggs, dill and butter. Mix all ingredients and add a little salt.
  3. The second layer will be champignons, fried with onions in a heated frying pan for 20 minutes.
  4. Check the chicken meat, remove it from the bones if necessary and chop finely.
  5. Divide the package of puff pastry into 2 equal parts. Roll out the first one to the desired size in the shape of a circle and place on a baking sheet greased with vegetable oil.
  6. Place the first layer of eggs. Add 1/3 of the previously cooked rice. Place 2 pancakes on top. If desired, brush with sour cream.
  7. Place the second layer: mushrooms. Sprinkle 1/3 of the rice. Cover with pancakes.
  8. The last ones are chicken meat and leftover rice cereal.
  9. The pie is covered with 2 pieces of puff pastry. The edges should be sealed tightly so that the juice and filling do not leak onto the baking sheet.

To make the chicken chicken golden brown, brush the top part with one beaten chicken egg. The pie is baked in a preheated oven for 35 minutes at 180 degrees.

  • mashed potatoes – 400 grams;
  • pancakes – 3 pieces.

Cooking instructions:

  1. Roll out the dough into the desired shape and place on a greased baking sheet.
  2. Start laying out layers with a pancake.
  3. Place chicken meat on the pancake and cover with the pancake again.
  4. Then there is a layer of potatoes with the addition of onions.
  5. Cover the puree with 1 pancake.
  6. Add mushrooms and remaining fried onions.

Cover the pie with the remaining puff pastry. Or initially roll out the mold to a large size and after the ingredients have taken their place, gather the dough around the edges and wrap it on top. Brush the top edge with beaten egg yolk. The dish is fried in the oven, preheated to 200 degrees for 25 minutes.

With added cheese

Kurnik with ready-made puff pastry and cheese takes a little longer to prepare than the classic recipe. The reason for this is the use of raw potato filling.

Ingredients:

  • ready-made puff pastry – package weighing 500 grams;
  • chicken fillet – 400 grams;
  • bell pepper – 1 piece;
  • hard cheese – 150 grams;
  • onions – 2 pieces;
  • medium-sized potatoes - 3 pieces;
  • butter – 40 grams;
  • salt and pepper to taste.

Preparation steps:

  1. It is recommended to pre-marinate the chicken fillet with onion, pepper and salt. Let the meat stand for about 15 - 20 minutes, after which you can start cooking.
  2. Fry bell peppers and onions until golden brown.
  3. Cut the washed and peeled potatoes into thin slices.
  4. Mix potatoes with salt and pepper.
  5. Roll out one piece of puff pastry and place it carefully on a greased baking sheet.
  6. Place the finished fillet. Add pieces of butter.
  7. Grate 1 part of the cheese and cover the chicken mixture with it.
  8. The next layer is potatoes and onions, fried with pepper.
  9. The filling is covered with the remaining grated cheese.

Place the rolled out second piece of puff pastry on top of the pie and carefully secure it to the base. Kurnik should be baked at 180 degrees for 40 minutes.

Mini chicken puff pastry

Mini-chickens differ from the original in their smaller size. They are quite quick and easy to prepare. You can stuff it inside with either chicken or any other meat, such as pork. The main thing is to pre-boil until fully cooked.

Ingredients:

  • cooked meat – 400 grams;
  • mushrooms (champignons) – 300 grams;
  • small potatoes - 3 tubers;
  • onions – 2 pieces;
  • puff pastry – 1 package;
  • salt, pepper - to taste;
  • vegetable oil;
  • butter.

To prepare mini chicken chicken, it is important to follow the following instructions:

  1. Cut the boiled meat to the desired size.
  2. Chop the mushrooms and onions, mix and fry until tender.
  3. Thinly slice the peeled potatoes, add salt and pepper to taste.
  4. Roll out the puff pastry and make small circles. You can use a regular plate for this.
  5. Place layers of meat, mushrooms and potatoes in the middle of the base.

  • Salt, various seasonings.

Melt margarine in a bowl until soft, add flour to it, pour in milk, add baking soda and salt. Mix all products well.
