The difference is that the main (and usually the only) ingredient in Mascarpone is cream and it tastes creamy rather than cottage cheese.

The next ingredient that can be problematic is the Savoiardi biscuit, an elongated, flat-shaped biscuit cookie topped with sugar, also sold under the name Savoyardi Sticks or Lady Fingers. If you can't find Savoiardi in stores, you can make your own, I'll try to post the recipe later.

Another important point, because dessert is not amenable to heat treatment, do not forget to wash chicken eggs in warm water with soap.

As you can see, cognac is not a required ingredient in our recipe. I cooked without cognac and I really like this Tiramisu, but it turns out great with cognac, cognac is in perfect harmony with coffee, so it's up to you to decide.

Cooking

We prepare all the ingredients. Brew strong espresso and leave it to cool.

Wash eggs thoroughly in warm soapy water. Carefully separate the whites from the yolks. It is important that not a drop of the yolk gets into the protein, otherwise the proteins will not whip. We put the proteins in the refrigerator for now, we will need them later.

Add sugar to the yolks.

Beat the yolks with sugar until the mass turns white, this may take a few minutes. You may have some undissolved sugar left, if not too much, then don't worry, it will dissolve later. If there is a lot of sugar left, beat the mass more.

We spread the beaten yolks with sugar in a large container, add the mascarpone there.

Mix the yolks with sugar and mascarpone until smooth, you can use a mixer at low speed.

Beat egg whites with a pinch of salt until stiff peaks form, this may take about 3-7 minutes, depending on the power of the mixer.

If you have any doubts whether the proteins have whipped to the desired state or not, just carefully try to turn the container of proteins upside down. If the squirrels are whipped, then even if you turn the container upside down, the whipped squirrels will remain in the bowl.

We spread the whipped proteins in a mass with yolks and mascarpone. Now the mixer cannot be used, you need to work carefully, otherwise the cream may lose airiness. Using a spatula, mix the cream in a circular motion from the bottom up, i.e. lift the cream from the bottom of the dish to the top. There is no need to rush, do everything very carefully, we need to keep the message of the air in the whipped whites.

We get a very airy and delicate Tiramisu cream.

Pour the cooled coffee into a bowl with a flat bottom, in which the Savoyardi stick is placed. A small plastic container works very well here. If you are making Tiramisu with cognac, then add cognac to coffee.

We dip each Savoyardi stick in coffee and immediately pull it out. I held for about 2 seconds, even if at first it seems that the cookies are left dry, then they will be completely soaked and become soft. If you leave the cookies in coffee longer, then in the dessert they turn out to be quite wet.

Put the soaked coffee sticks on the bottom of the mold. Here you can use a large mold, like mine, or you can take small molds or glasses and make desserts in them for one serving at once. I like the second option less, because then the whole refrigerator will be filled with a bunch of molds, but serving them, of course, is easier. By the way, my form is 17x26 cm in size, 5.5 cm high.

Spread about half of the cream on top of the Savoiardi layer, level it.

Place a second layer of coffee-soaked biscuits on top of the cream.

Spread the remaining cream on top, level and put in the refrigerator for several hours, and preferably at night. The longer you keep the Tiramisu in the refrigerator, the better the cream will hold its shape. After a few hours, you still won’t be able to get a neat piece of dessert out of the mold, you can only eat it with a spoon, although this will not affect the taste in any way. After 8-10 hours, Tiramisu will keep its shape much better and you will already be able to cut a beautiful piece. My Tiramisu waited in the fridge for over 12 hours.

Sprinkle with cocoa powder before serving. You can replace it with grated chocolate, but I prefer cocoa.

HONEY CUPCAKE WITH HONEY AND CHEESE CREAM Icing

ingredients for 12 cupcakes

You will need:

  • 1/2 cup unsalted butter, room temperature
  • 3/4 cup sugar
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup curdled milk
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  1. Preheat the oven and line 12 muffin tins on a cupcake baking sheet.
  2. In a medium bowl, mix all dry ingredients: flour, baking powder and salt. Set aside.
  3. In a small bowl, combine liquid ingredients: curdled milk, honey and vanilla extract. Set aside.
  4. In the bowl of a stand mixer fitted with a paddle, mix butter and sugar until smooth.
  5. Add the eggs, one at a time, beating the mixture each time, scraping the sides of the bowl as needed.

  7. Using an ice cream scoop, fill the molds about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the cupcake comes out completely clean.
  9. Let the cupcakes cool on the baking sheet for 5 minutes. Then cool completely on a wire rack.

To make Honey Cheese Frosting, you will need:

  • 3/4 cup unsalted butter, room temperature
  • 100 g softened cream cheese
  • 3 cups powdered sugar
  • 3 tablespoons honey
  • yellow food coloring (optional)
  • yellow sugar sprinkle
  1. In the bowl of a stand mixer fitted with a paddle, mix butter and cream cheese until smooth.
  2. Gradually add the powdered sugar and mix, scraping the sides of the bowl as needed.
  3. Add honey. Stir.
  4. Optionally, add a few drops of yellow food coloring to brighten up the frosting.
  5. Pour the frosting into a piping bag fitted with a round tip, swirl the frosting in a circular motion.
  6. Sprinkle sugar sprinkles on top.

2 eggs

Preheat oven to 205 gr. Beat sugar with butter until a white cream is obtained. Add eggs, one by one, beating after each. Add lemon zest, lemon juice and honey, stir. In another bowl, mix the sifted flour with baking powder and ground almonds. Add the contents of the first bowl to the flour. Mix until flour is moistened. Grease the form with butter, sprinkle with flour and fill with dough ¾. If desired, put berries on top and lightly press down, or sprinkle with almond petals.
Bake the cupcakes for 10 minutes, then reduce the temperature in the oven to 180 degrees and continue cooking for 10 to 12 minutes. Make sure they are golden and take them out. Cool and take out of the mold. About the process

I liked the option with berries less than without them. Somehow this sourness is not very relevant here. Also, they are too sweet for me!

About evaluation I really liked the cupcakes for the combination of flavors and aromas, but for excessive sweetness I have to lower the rating. I will make more, of course, reducing the sugar by a third.

Break the chocolate into pieces. Brew Espresso coffee - 30 ml. Heat milk with cream, do not bring to a boil. Beat the eggs with the yolk with a whisk, add cane sugar and a pinch of salt. Pour some of the warmed milk into the chocolate and stir until the chocolate has melted.

Add the chocolate mixture to the egg, pour the remaining milk with cream, mix well.

Christmas pudding

The traditional British Christmas pudding is something no Christmas in Britain is complete without. Someone cooks on their own, often according to an old family recipe, someone buys it, but Christmas pudding is on every Christmas table. Moreover, they bring it in festively, pouring it with strong alcohol and setting it on fire.

The tradition of baking Christmas pudding dates back to the Middle Ages. Once upon a time, and in some families still, Christmas pudding was prepared 4 weeks before Christmas, and sometimes even earlier. Traditionally, it was baked on the Sunday before Advent and this Sunday was called "Stir Sunday" because each member of the family, or at least each child, had to take turns stirring the mass to prepare the pudding. Next, the pudding was cooked, and then it slowly ripened in a cool place, waiting in the wings, that is, Christmas. Its taste became more refined with time. Nowadays, few people make Christmas pudding so many weeks in advance. In general, even 5-7 days of ripening do their job, although you can serve it even on the day of preparation.

Having re-read many Christmas pudding recipes, from those old ones to new ones, re-reading recipes in the books of such reputable British family cooks as Delia Smith or Merry Berry, and even revised the recipe from Nigella Lawson (but she is the last one to look for something very traditional ), as well as several other culinary experts less respected by respectable British housewives, I have developed my own interpretation of the traditional British Christmas pudding, summarizing the information collected, and I offer this version to your attention.

Traditionally, Christmas pudding is made with beef kidney fat. It's hard for us to find it. In my case, it was impossible. Many advise to replace it with hard types of margarine, which is not acceptable for me. I do not use such food waste in my kitchen. Therefore, instinctively, I replaced it with butter. Although the problem with it is that the melting point into butter is lower than beef tallow and it starts to melt earlier when cooked, resulting in a less porous pudding than beef tallow would. But to minimize this problem, I first crushed cold butter, and then froze and added frozen to the pudding mass, and then quickly spread it into prepared bowls and began to cook. In order to keep the porosity at least a little. And the pudding came out quite porous. With a pleasant oily taste. Maybe it's better, because I have little association with beef fat with dessert.

Preparing Christmas pudding in a bowl, in a water bath. There are special pudding bowls that are shaped to fit and have a wide rim under which to tie a foil-lined bowl of pudding around to help secure the string to the bowl. In fact, you can cook in any heat-resistant bowl, or even a small pot. In the recipe, I describe in detail what and how to do. Then you need to cool the pudding and send it to "maturation". After that, you need to re-heat the Christmas pudding, in the same way, only much shorter in time. Christmas pudding is served warm or cold, whichever you prefer.

This amount of ingredients is enough for two smaller puddings, or one large one. If you cook one large, then you need to increase the cooking time. I also write about this in the recipe below.

  • 450 grams of various dried fruits (I have chopped prunes, two types of raisins, dried cranberries and cherries)
  • 50 grams of candied fruits (can be different)
  • 150 ml cognac or rum
  • 1 medium apple, peeled, coarsely grated
  • Juice and zest of 1 orange
  • 150 grams of dark cane sugar muscovado (can be replaced with light cane sugar or plain white)
  • 3 eggs
  • 120 grams of flour
  • 1 tsp baking powder
  • 80 grams breadcrumbs
  • 1 tsp Christmas spice mix
  • Cognac or rum on fire on the day of serving
  • Butter for greasing dishes
  • 125 grams cold butter

1) The day before the preparation of the Christmas pudding, place all dried fruits and candied fruits in a deep bowl. Pour in brandy and leave to infuse for a day, stirring occasionally.

Grate the butter on a coarse grater and place in the freezer.

2) The next day, grease 0.5-0.6 liter pudding bowls well with oil at room temperature.

Cut out a circle of parchment to the size of the top of the bowl. Take the chilled butter out of the freezer.

3) In a deep bowl, mix flour, spices, baking powder and crackers.

4) Whisk the eggs until almost smooth in a separate bowl.

5) In a large mixing bowl, put dried fruits, sugar, apples, orange juice and zest.

6) Add eggs to dried fruits and mix well.

7) Add cold butter and mix everything again.

8) Add a mixture of dry ingredients and again thoroughly mix the mass with a spatula.

9) As soon as possible, while the oil is still solid, put the mass into the prepared bowls and cover with a circle of parchment.

10) Cover the top of the bowl with two layers of foil and tie tightly with kitchen string.

11) Carefully place the bowl in a deep saucepan and pour 2/3 of the bowl's height with cold water.

12) Cover the pan with a lid and put on medium heat, bring to a boil, put the pot with pudding on the minimum heat that is, and cook for 2 hours from the moment of boiling. From time to time, adding water, which will boil away.

NB: If you cook the pudding in one large bowl, then increase the cooking time to 3 hours.

13) After the specified time, turn off the heat and leave the Christmas pudding to cool completely. After cooling, put the pudding to ripen in a cool, dry place, maybe a pantry or a room without heating, for at least 5 days, and preferably for two weeks, and if it’s completely traditional, you can even leave it for up to 4 weeks. Over time, the taste of the pudding becomes richer.

14) On serving day, put the bowl of Christmas pudding back into the deep saucepan and cover 2/3 of the bowl's height with cold water. Cover the pot with a lid and put on medium heat, bring to a boil, put the pot with the pudding on the minimum heat that is, and cook for 1 hour from the moment of boiling. (If you cook the whole mass in a large bowl, then 1.5 hours.)

15) Remove the bowl of pudding from the pan and leave it for 10 minutes. Remove the kitchen string, foil and parchment.

The pudding can be served warm or cold. It all depends on taste preferences.

Carefully invert the pudding onto a serving plate and serve.

At the table, pour 50-80 ml of brandy over the surface of the Christmas pudding and immediately set it on fire.

If desired, you can prepare an English cream, that is, a liquid custard, before the pudding.

To do this, beat 2 yolks with 1 tsp. starch, 1/2 sachet of vanilla sugar or 1/2 tsp. vanilla extract and 50 grams of sugar. Bring 300 ml of milk to a boil and in a thin stream, continuing to whisk, pour into the yolks. Then put the mass on a minimum fire and continue to cook until thickened. The cream should have the consistency of a not too thick sauce.

Tiramisu cake is delicate and airy, with a characteristic creamy coffee taste. To prepare it, you will need savoiardi cookies, which you can buy ready-made or bake yourself. For the cream, take mascarpone and cream, egg yolks and a little gelatin for better solidification, so that it is easier to cut the cake with a knife. We will collect tiramisu in a large detachable form with a diameter of 25 cm.

  • 33% cream - 300 ml
  • egg yolks - 5 pcs.
  • sugar - 120 g
  • strong coffee - 150 ml
  • cognac or coffee liqueur - 50 ml
  • gelatin - 1 tsp with a slide
  • vanillin - on the tip of a knife

For decoration

  • 33% cream - 100 ml
  • powdered sugar - 2-3 tbsp. l.
  • cocoa powder - 3 tbsp. l.

    Cooking savoiardi cookies for the base of the cake(if you don’t want to bake, then buy savoiardi in the store - you will need 2 packs of 400 g each).
    Turn on the oven to heat up to 180 degrees. For the test, we take 5 eggs, carefully separate the whites from the yolks. Mix the yolks with vanilla and 20 g of sugar (this is 1 tablespoon). Whisk until the sugar crystals dissolve.

    Beat egg whites separately into a light foam. Then add the remaining 100 g of sugar in parts and continue to beat with a mixer until dense, stable peaks.

    Mix the whites and yolks with a silicone spatula until smooth.

    We add the sifted flour and starch in three steps, knead with a spatula, carefully so as not to upset the dough.

    We shift the dough for the savoiardi into a culinary bag with a round nozzle (the dough will turn out to be a lot, I divided it into three parts) and place cookies on parchment - about 7 cm long, at a distance of 2 cm from each other. Sprinkle with powdered sugar on top.

    We bake "lady's fingers" at a temperature of 180 degrees for 10-15 minutes. Depending on the diameter of the nozzle, the savoiardi can turn out to be of different thicknesses, I have them small, about 1 cm, baked very quickly (3 pans in total, the total number is more than 100 pieces). If you have a wider nozzle, the cookies will be taller and take longer to bake. Savoiardi should dry well over the entire area, while remaining a light, soft cream color. Remove it from the parchment and cool on a wire rack.

    We brew strong coffee for impregnation.
    Ideally, use espresso, but if there is no coffee machine, then we brew strong coffee in a Turk: for 2 teaspoons of finely ground coffee - 200 ml of water. We filter the finished drink to get rid of the sediment. Pour a couple of spoons of coffee (50 ml) and dilute gelatin in it, leave it aside to swell.

    Cooking cream for the Tiramisu cake.
    Put 5 yolks in a bowl, mix with sugar, add vanillin or vanilla essence. After mixing, put in a water bath.

    Actively mixing with a whisk, we keep the yolk mixture in a "water bath" for about 4-5 minutes (the fire is quiet), bring it to a temperature of 40-45 degrees. The sugar crystals should dissolve and the yolks should turn white. In no case should you overheat, otherwise your yolks will boil! The mass only needs to be heated so that the sugar dissolves completely, and the eggs are thermally processed.

    Remove from the water bath and beat the yolk mass until it cools completely and acquires a dense texture, about 4-5 minutes. Then add mascarpone to the bowl and pour in the gelatin diluted in coffee (preheat so that there are no lumps of gelatin, and cool to room temperature). Mix the mass until smooth - with a mixer at low speed.

    Separately, beat the cream until thick and add them in small portions, gently mixing with a spatula.

    Let's start assembling the cake.
    On the bottom of a detachable form with a diameter of 25 cm, lay out the cookies in one row. Pour cognac into the remaining coffee. Lubricate the cookies with coffee impregnation with a brush. Do not fill the savoiardi with impregnation too generously, otherwise the cookies will turn sour.

    Lubricate with a thick layer of cream on top (it must be divided into three parts according to the number of cakes). Then again lay out a layer of cookies, blot coffee and cover with cream.

    In total, you should get 3 layers of cookies and 3 layers of cream. The last layer should be cream. We put together with the form in the refrigerator for 3-4 hours (you can leave it all night).

    Decorate the cake.
    Remove the springform pan and transfer the cake to a large serving platter with a pair of wooden spatulas. Grind 2-3 savoiardi cookies with 1 tablespoon of cocoa powder in a blender bowl and sprinkle the edges of the cake with the resulting crumb. Top with cream whipped with powdered sugar, and generously sprinkle with cocoa, sifted through a sieve.

    You can decorate the cake however you like. If you collected not three layers of cookies, but two, then you can lay out the remaining savoiardi along the side and tie it with a decorative ribbon, the cake will turn out to be very elegant. You can apply cocoa powder on top through a stencil with any pattern, and instead of whipped cream, use part of the cream (which was used to assemble the cake).

Cut the Tiramisu cake into portions and serve. It turns out large, designed for 10-12 servings, but is eaten very quickly. The dessert is light, moderately sweet, with a pleasant coffee note, you can eat it with a spoon. The cake must be refrigerated until serving. Happy tea!
