Classic crispy waffles just like in childhood

This proven Soviet recipe is fully adapted for baking waffles in a regular electric waffle iron. Crispy thin pastries with a rich vanilla and creamy aroma will take you back to childhood.

Do not replace butter with margarine, this will make the waffles taste noticeably worse.

Products:

  • 5 eggs;
  • 1 cup of sugar;
  • 200 g butter;
  • 180 g flour;
  • 1 packet of vanilla sugar;
  • 2 tbsp. l. vegetable oil.

Recipe for classic waffles:

  1. Soft butter needs to be whipped together with sugar.

    Instead of sugar, you can use powdered sugar, so the dough base will require less time for whipping

  2. Add eggs, regular and vanilla sugar to the dough base, and then mix.

    There is no need to beat the dough base at this stage.

  3. Sift the flour into a separate container.

    Sifting flour adds airiness to baked goods.

  4. Mix the flour into the liquid base one spoon at a time, thoroughly mixing the mixture with a pastry whisk.

    Gradual addition of flour ensures there are no lumps in the dough

  5. Knead the dough until smooth.

    The waffle batter should be as thick as pancakes

  6. Preheat an electric waffle iron and bake waffles, greasing the working surface of the device with a small amount of oil.

    It is convenient to use a pastry brush to grease the waffle iron.

Remember that closing the waffle iron will release a lot of steam. To protect your hands from burns, it is better to wear an oven mitt.

The waffles according to this recipe are very crispy and flavorful.

To obtain small-diameter waffles when baking, you need to use no more than one teaspoon of dough

Due to the absence of baking powder in the recipe, the waffles are super thin and very crispy. If you want to get fluffier baked goods, add one teaspoon of baking powder to the dough at the stage of adding flour.

This dough also makes great crispy ice cream cones.

Milk waffles with cinnamon

With the addition of milk to the dough, waffles acquire a distinct milky taste, which children especially like. Aromatic cinnamon turns a crispy waffle into a self-sufficient dessert that does not require the addition of sweet cream or fruit and berry sauce.

It is better to choose milk with high fat content (3.5–4%), so the taste of the waffles will be more pronounced

Products:

  • 100 g butter;
  • 1 glass of milk;
  • 2 eggs;
  • 2 cups of flour;
  • 0.5 tsp. salt;
  • 3 tbsp. l. Sahara;
  • 1 tsp. baking powder;
  • 0.5 tsp. cinnamon;
  • 2 tbsp. l. vegetable oil.

Instructions:

  1. Melt the butter.

    Choose unsalted butter for making waffles

  2. Cool it to room temperature and beat in the eggs.

    There is no need to beat the dough base at this stage of preparation.

  3. Pour in the milk and add sugar and baking powder. Stir the mixture with a spoon.

    The abundance of baking will give the waffles a rich taste

  4. Add cinnamon powder and stir.

    Cinnamon must be used in the specified dosage; its excess can add bitterness to the finished dish.

  5. Sift the flour.

    Sifting the flour allows it to be saturated with oxygen, which gives the dough an airy structure.

  6. Mix the dough with a spoon.

    This recipe does not involve beating the dough with a mixer.

  7. After heating the waffle iron, grease its working surface with oil and bake the waffles.

    Try not to add too much batter when baking, otherwise the waffles will lose their crunch.

Milk waffles are thin and have a pronounced cinnamon flavor.

Milk waffles bake very quickly, just 30 seconds is enough for one

You can make a quick cake from these waffles by layering them with homemade cream or regular boiled condensed milk.

For a waffle cake, use thick cream or other filling so that the edges of the waffles do not lose their crispness

Super thin waffles without milk or eggs

This recipe is a little unusual in that there is no baking. The calorie content of such waffles is reduced and amounts to only 275 calories per 100 g. Such baked goods can be eaten by vegetarians and vegans. The taste of the crispy delicacy will also delight those who are accustomed to traditional rich recipes.

Ingredients:

  • 180 g wheat flour;
  • 50 g corn flour;
  • 180 ml water;
  • 3 tbsp. l. Sahara;
  • 70 ml vegetable oil;
  • 1 packet of vanilla sugar;
  • 0.5 tsp. salt.

Recipe:

  1. Sift the wheat flour into a bowl.

    A large sieve will help sift flour quickly and without lumps.

  2. Add cornmeal.

    The cornmeal in this waffle recipe gives them crunch and a nice yellow tint.

  3. Pour in warm water (35–37°C) and stir.

    Warm water will help the gluten in the flour to swell.

  4. Then add butter, regular and vanilla sugar, and salt.

    Sunflower or corn can be used as vegetable oil

  5. Stir the dough thoroughly with a fork, eliminating any lumps.

    After mixing, let the waffle batter sit for 20-30 minutes, during which time the flour will absorb the water and oil

  6. Preheat the waffle iron and, greasing it with oil, bake corn waffles.

    The dough with the addition of corn flour burns quickly, so do not keep the waffles for long, 15–20 seconds will be enough

  7. You can quickly and easily roll this dough into crispy tubes.

    Corn waffles without milk or eggs are bright, crispy and full of cheese flavor

You don't have to add sugar or vanilla to your dairy-free, egg-free corn waffle batter. In this case, you can roll them into tubes and fill them with unsweetened filling.

I often prepare these snack rolls with various fillings for the holiday table. I stuff the waffles just before serving so that they don’t lose their appetizing crispness. As a filler, the combination of finely chopped tuna, boiled eggs and pickled gherkins is very successful. Crispy waffles with grated cheese, garlic and herbs are also very tasty.

I offer you a wonderful recipe for waffles in a waffle iron, according to which I really love making them. It includes only 4 products that are usually found in every home. I make the dough for waffles in a waffle iron with margarine, but if you don’t cook with it, replace it with cream. There are many variations of the test, but I like this one the most. To prepare, you will also need a mixer and any waffle iron, even a Soviet one, like mine, and believe me, this does not affect the quality and taste.

The cream for wafer rolls can be very different, some like protein, others like custard, curd, chocolate, cream, or, as in the classic version, boiled condensed milk. But you can also do without it and just eat the waffles themselves for tea.

Next, I will show you in detail how to prepare waffle rolls in an electric waffle iron so that they are golden brown, hold their shape and do not crack when rolling, which is very important. After all, in any baked product, its appearance and appetizing are quite important.

Ingredients:

  • Chicken eggs – 4 pcs.
  • Sugar – 1 tbsp. (200 ml.)
  • Margarine – 200 g
  • Wheat flour – 2 tbsp.

How to make waffles in a waffle iron

The recipe for waffle batter in an electric waffle iron is the simplest I know. So, I beat 4 eggs into a deep bowl, add a glass of sugar and beat everything with a mixer until foamy, but not to the same consistency as for a sponge cake, so three minutes at maximum power is enough here. I measure out sugar and flour with a glass containing exactly 200 ml. liquids, so be guided by this.

Meanwhile, I set the margarine to melt. This can be done in the microwave, in a water bath, or simply on the stove. I choose the last option, but here it is important that the margarine does not start to boil, so do not make the heat too high and when it has melted by about half, remove from the stove, then everything will happen on its own. I pour it into the beaten eggs and mix. Then add 2 cups of flour and mix. Baking powder or soda is not needed at all in this recipe.

If you want to make them chocolate, then it's time to add a couple of tablespoons of cocoa powder, mix again and you're done, but this time I'm doing it without it. The dough turns out homogeneous and quite liquid, the consistency is similar to muffins or pancakes. This is a recipe for delicious waffles in a waffle iron, just like in childhood, and when you try at least one of them, you will see for yourself.

Now I plug in the electric waffle iron and place it on a wooden board, as it will heat up. My waffle iron is from Soviet times, but nevertheless it copes with its task perfectly. When it warms up, I don’t grease it, since the dough already contains margarine, but immediately put a couple of tablespoons of dough on it. If you want to make them thin and crispy, one spoon is enough, and if you want them a little thicker, then add two. Now I close it and press it by the handles so that the two parts are pressed tightly.

The waffles bake quite quickly, and the longer it works, the hotter it gets and the faster it bakes. To check readiness, just open one half. If the color turns rosy, you can remove it. To do this, use a wooden spatula, carefully lifting the waffle from one side and transferring it to a plate. Then you can leave them like that, but I still roll them into tubes.

Immediately after you remove the waffle, do not pour the next batter, but roll this one because they harden quickly. If you do not do this immediately, but after 5 - 10 seconds, then when folding they may crack and break. Now each of you can make waffles in an electric waffle iron at home, as you can see, everything is simple and quick.

This is a simple recipe for waffles in a waffle iron, I hope you like it as much as I do. As you can see, just 4 simple ingredients make excellent waffles that you can fill with any cream. The best fillings are condensed milk, custard, Nutella, chocolate with nuts or protein cream. The main thing is to make the perfect base, and let everyone choose what will be inside according to their own taste. You can also not roll them, but eat them simply like cookies, which is also very tasty. Cook with love and bon appetit!

There are a lot of different waffle batter recipes here. If you are interested in this topic, then you probably have an electric waffle iron. Therefore, sooner or later you will try all these recipes and choose a few favorites that you will use constantly. With so many electric waffle iron recipes, you shouldn't get bored.

Waffles are considered one of the most favorite desserts in the whole world. The culinary delicacy has won fans of all ages, and recipes for the delicacy have been passed down from generation to generation for hundreds of years in a row. The name of the baked goods comes from the German word “Waffel,” which literally means “honeycomb, cell.” If you look closely at the finished product, especially when baked in a special waffle iron, then indeed, its configuration resembles a honeycomb of bees.

The first waffle baking device known to the world was invented by the American Cornelius Swarthout about 150 years ago. It was a two-piece frying pan that was heated over hot coals and turned over from time to time. The next stage of the waffle era was marked by the mid-20th century, when industrial kitchen units for baking waffles on a gas stove appeared. Now the delicacy is prepared in electric waffle irons, which have a non-stick coating and differ in shape, design, and are available for thin and thick waffles.

There are dozens of varieties of dessert. They differ in the characteristics of dough preparation, shape, taste (sweet, neutral, salty). Waffle dough can vary in degree of softness-hardness and thickness, and the presence or absence of a porous structure inside. In addition, some types of waffles are served on their own, and some are filled with a wide variety of fillings.

There are many recipes, and each of them is designed to solve a specific culinary problem. Let's collect basic dough recipes for each case.

  • Ingredients for all waffle recipes should be at the same room temperature.
  • Butter or margarine should be softened. You need to understand that margarine in baking was used out of poverty, as a cheap and affordable product. We strongly recommend choosing butter in all recipes.
  • Eggs, milk, kefir, cream, yogurt must first be removed from the refrigerator.
  • Before baking, the waffle iron will most likely need to be greased with vegetable oil (refer to the appliance instructions).
  • In some recipes there is such a measure of volume as a glass. In a glass 250 ml.

Recipes for making thin waffles

It is very easy to prepare the dough for an electric waffle iron; it can also be used for a gas waffle iron. It usually has a liquid or semi-liquid consistency and is kneaded from available products that every housewife usually has.

Regular unsweetened waffles

Ingredients:

  • wheat flour – 200 g
  • chicken egg – 1 pc.
  • baking soda or baking powder - ½ tsp.
  • vinegar or lemon juice - ½ tsp.
  • milk – 1 tbsp.
  • salt - a pinch
  • margarine (butter) – 3 tbsp. l.
  • and also for greasing the mold - 1 tsp. vegetable oil or 10 g lard (unsalted).

Preparing batter for thin waffles in an electric waffle iron

  1. Place flour in a bowl and mix it with baking powder. Separately mix milk with egg yolk. Pour this mixture into the flour, mix everything.
  2. Melt the butter in a water bath. Carefully pour it into the dough in a thin stream, stirring continuously.
  3. Beat the dough well until it has a uniform consistency. Leave it to “rest” for 1 hour. After this time, beat the egg white with a pinch of salt, add to the dough and mix.
    The electric waffle iron should be plugged in 5-10 minutes before the dough starts baking so that it heats up. It is advisable to place it on a metal tray. Do not forget to lubricate both internal surfaces of the device with vegetable oil, lard or unsalted lard.
  4. Place a small amount of batter (about a tablespoon) on the bottom of the waffle iron. If the dough turns out to be liquid, it will obediently spread to the sides; if it is thick, smooth it out a little with a spoon. Close the waffle iron.
  5. Baking duration is on average 2 minutes (+ - 0.5 minutes). If steam stops escaping through the gap, it means that this portion of the dough is fried. The finished waffle cake should be a nice golden color.
  6. It is advisable to place each portion of waffles on a wire rack to dry and cool. Don't stack them or they won't be crispy later.
  7. Such thin waffles turn out crispy and have a neutral taste, so they can be topped with both sweet and salty fillings. Keep in mind that if the filling is too wet, the waffle layers will become soggy.

Wafer rolls

This is one of the best cakes that can be prepared quite easily at home using an electric waffle iron.

Ingredients:

  • eggs –5 pcs.
  • butter (high fat margarine) – 200 g

  • sunflower oil for lubricating the working surface of the device - 1 tbsp. l.

Preparing dough for waffle rolls

  1. Melt the butter and beat it with sugar using a mixer (alternatively, you can add softened butter in pieces). Now add the eggs and beat everything again.
  2. Gradually add flour and mix. The finished dough has the consistency of thick sour cream (like for frying pancakes).
  3. Grease the working surface of the electric waffle iron with vegetable oil and plug it in. You only need to grease once, before baking the first cake. Then, during the baking process, the oil added inside will release from the dough and lubricate the device.
  4. The heating level of the device should not be checked with your finger to avoid getting burned. It is better to place a drop of dough on the surface with a spoon and see if it begins to fry. Typically, these types of units heat up for 5 minutes.
  5. Place 2 tbsp on the bottom surface of the device (in the center). spoons of dough and close the device tightly, pressing it by 2 handles. Do not pour too much dough, otherwise it will flow over the edges of the waffle iron. If you put less dough, you will get a small cake from which a small tube will come out.
  6. Bake each cake for 2-3 minutes. Open the appliance slightly and see if the waffle is pale in color, leave it to bake for another 1-2 minutes.
  7. Using a spatula, pry up the finished shortcake, remove it from the electric waffle iron, place it on a flat plate or tray and very quickly roll it into a tube. Hold for a few seconds until the shape is fixed. It is important to do this before the wafer is cool and susceptible to exposure. After cooling, it does not curl, but breaks. To avoid burning your fingers, use cloth gloves.
  8. Depending on your preference, the cakes can be rolled into tubes of different thicknesses, or into a triangular cone. Any design is convenient for filling with cream.
  9. Now we start baking the second cake layer and so on until the dough runs out. From this amount of ingredients you will get approximately 15 waffles. You can fill them with boiled condensed milk with nuts, custard, protein, butter cream, thick jam, praline. Presented here.

If you still have a mold for baking waffle cookies on gas on your shelf from Soviet times, then this recipe is for you. The inner surface of such a waffle iron can have the shape of a solid disk for frying round wide waffles. And some devices inside have divisions in the form of cells for baking small triangular or shaped waffles. 3. Open the top half of the mold, pour a portion of dough onto the bottom half, and close the mold tightly. Baking on one side for a few minutes. Then turn the pan over and bake the waffles on the other side until golden brown. The fire should be slightly less than medium.
  4. After opening the mold slightly and making sure that the waffle cookies are browned, open the waffle iron completely, pick out the waffles with a knife and pour them out of the mold onto a baking sheet.

Recipe 5, step by step: Viennese waffles in a waffle iron

Today we will tell you our recipe for Viennese waffles for an electric waffle iron with which you can easily prepare delicious waffles for the whole family. Our Viennese waffles recipe will give you waffles that are crispy on the outside and soft on the inside, just the way they should be!

  • 3 pcs. Egg
  • 1/3 tbsp. Sugar
  • 1 tsp Vanillin
  • 2 tbsp. Milk
  • 40 gr. Butter
  • 3 tbsp. Flour
  • ½ tsp. Baking soda
  • ½ tsp. Salt

To prepare the dough for Viennese waffles, you need to mix 3 egg yolks with ¼ cup sugar using a mixer. As soon as the mixture becomes homogeneous, add 1 teaspoon of vanilla and beat everything again using a mixer.

Melt the butter and add it to the Viennese waffle base, and add 2 cups of milk.

Mix flour, soda and salt in a separate container and pour in the base that we prepared in the previous step. Mix all ingredients using a mixer.

As you may have noticed, we have some egg whites left over, but they will also be used in our Viennese waffles recipe. To do this, beat the egg whites with a mixer until they turn into an airy mass reminiscent of eggnog.

At the final stage, all that remains is to mix the Viennese waffle base with the airy cream. It is important to mix both components by hand, and do it with the utmost care, so that the Viennese waffles turn out airy and soft. Do not use the mixer at this stage!

All that remains is to heat up the electric waffle iron, grease it with oil and start baking delicious Viennese waffles for 2-3 minutes.

Our Viennese waffles are ready and all you have to do is serve them on the table, additionally decorating them with fruit jam, berries or honey! Viennese waffles are especially tasty with maple syrup, which is not difficult to find in a modern store. Bon appetit!

For the test, you need to take oil at room temperature. It's best if you take it out of the refrigerator in advance. I would not recommend heating cold butter in the microwave, as some of it will quickly melt, while the rest will remain cold and hard.

Soft butter must be ground with sugar. You can use a fork, but why spend a lot of effort if you have a mixer. At low speed, beat the butter and sugar with whisks into a homogeneous and fluffy mass.

Beat in the eggs. My eggs are medium size, about 65 g with shell. Again, beat the dough at low speed with the mixer.

Pour milk into the dough. It should be fresh, not sour and preferably not very cold. Whisk again. Try to do everything at low speeds so that the mass does not fly out of the bowl.

Squeeze the juice into a tablespoon and pour into the dough.

Sift the required amount of flour there with the addition of baking powder.
Mix with either a spoon or a mixer whisk.

The dough for this recipe should be smooth, homogeneous, and as thick as pancakes.

Using a pastry brush, grease the waffle iron with a drop of vegetable oil and heat the device well.

Place the dough in the middle of the mold and close the waffle iron tightly. One waffle requires approximately 2 tablespoons of dough.

Bake Viennese waffles for about 5 minutes, but the baking time will vary for each waffle iron model. Therefore, control the brownness of the waffles. My waffles took about 5 minutes to bake.
From this amount of dough I prepared 10 waffles measuring 10*10 cm.

I'll share one trick. Immediately after baking, the waffles are crispy on the outside and soft on the inside. But once they sit for a little more than an hour, the waffles become soft and that delicious crispy crust disappears.
To keep the waffles crispy, before serving, I recommend placing them on a wire rack (or on a baking sheet) and drying them in the oven at 160 degrees for 4-5 minutes. These waffles will be crispy again, even on the second day.
