Maslenitsa week has begun. It's time to bake pancakes. Today the menu is delicious and healthy pancakes without eggs and milk, from whole grain flour. I’ll write out a vegan pancake recipe, the basis of which I took from L. Campbell’s book “Recipes for Health and Longevity.”

Surprisingly, the lean pancakes turned out even tastier than those that I usually baked with milk or kefir. The only thing is that you need to take care of almond milk in advance.

Ingredients for 10 pancakes:

  • 1 cup whole wheat flour,
  • 0.5 tbsp. almonds,
  • 2 tbsp. flaxseed flour (replaces eggs, a binding component in the dough),
  • 1 tbsp. cane sugar,
  • a pinch of salt,
  • 0.5 tsp soda,
  • vegetable oil.

How to make vegan pancakes

Since we are preparing pancakes without eggs and milk, and even from whole grain flour, which has weak “gluing” properties, we need to make sure that the pancakes do not fall apart. That's why flaxseed flour appears in the ingredients. This is an excellent egg substitute that I only recently discovered. Well, to make the pancakes rich in taste, we will make them based on almond milk. Which, by the way, is much tastier than soy.

Step 1. Almond milk

The day before, soak the almonds in water, the next day, peel the nuts and grind them together with 1 tbsp. water in a blender. Makes delicious almond milk.

Step 2. Prepare the dough

Next, in a bowl, mix 2 tbsp. l flaxseed flour with almond milk, add salt, soda and sugar, beat well. Leave for 4 minutes for the flaxseed meal to swell. Add whole wheat flour to the liquid little by little, stirring the dough continuously with a whisk. If it turns out too thick, dilute with water.

The base for our pancakes is ready.

Now bake the pancakes in a frying pan with a little butter. I use a special silicone brush to grease the pan. Very convenient, the pancakes come out just right!

P.S. For the unforgettable taste of these pancakes, it is worth looking for flaxseed flour. If you see flaxseeds on sale, buy them and grind them in a coffee grinder or blender. If you really don’t have any flax nearby, then cook with white flour - it will stick the dough together well. Vegan pancakes

Pancakes are not just food for me, they are something special; rather, they are a childhood experience and even a connection with our ancestors. My mother knew how to cook very tasty pancakes and did it often. And of course, it was a weekend morning, we, three sisters, took turns waiting for the finished pancake, and it flew from the frying pan onto the plate - ruddy, steaming, fragrant. Mom told me that when their grandmother was baking pancakes, starting at four o’clock in the morning, she would wake up each of the children (and there were five of them), feed them pancakes, and then send them off to sleep again.

I, very little then, also got pancakes from my great-grandmother. From the oven, in huge frying pans, with rich homemade milk, you could eat your fill with just one pancake. I also carried this tradition into my family. On weekends, I often pamper my kids with hot pancakes in the morning; I baked them in two, then three, and now I’ve gotten the hang of it and bake in four pans at once. Bake pancakes with joy, and your family and any guest will be happy with such a treat.

For vegan pancakes we will need:

  • 5 glasses of any plant milk;
  • 3 cups flour;
  • salt to taste;
  • 100 ml vegetable oil.

Vegan Pancakes Recipe

Take a saucepan or any container with high walls, pour vegetable milk into it. I had oat milk (you can easily make this kind of milk yourself), a pinch of salt, add flour. I use first or second grade wheat flour, but sometimes I experiment by adding rice, buckwheat, and rye flour. Using a mixer, mix this mixture until smooth and without lumps. We immerse the ladle in there, the consistency should be quite liquid so that our pancakes come out thin and lacy. Therefore, the amount of liquid may differ slightly from that indicated in the recipe (this depends on the flour).

Then pour vegetable oil into a ladle, in my case refined corn oil, and stir it well. Let our dough stand for 5-10 minutes. Everything in it will connect and make friends. In the meantime, we will grease the frying pans with the same oil, you can do this with a brush, we don’t need to grease the frying pans in the future, the pancakes fry perfectly and lag behind. I have two of my mother's aluminum frying pans with low sides. And two more modern ones with handles and coating. I don't use these pans for anything else.

Place the frying pans on the fire, let them get hot, watch the oil begin to smoke slightly - this is a signal that the frying pan is ready for our first pancake. Feel free to pour the dough from the ladle into the frying pan, tilting it down, left, right, so that the dough spreads over the entire surface of the bottom of the frying pan. While the pancakes are frying, you use a spatula to carefully pry them around, check how they lag behind the pan, and then very carefully slide the spatula under the pancake and quickly flip it over. Don’t be sad if the pancake breaks at first, try it and everything will work out over time. I wish you success in mastering this skill!

Remember that it was not for nothing that the saying “the first pancake is lumpy” was invented. This is because the first pancake really may not work out. Don't be discouraged, others will definitely work out.

What can you serve pancakes with or what fillings can there be for pancakes?

The fillings for pancakes can be very, very different: sweet, salty, which need to be prepared or whipped up. Here are just some examples:

  1. Any jam, preserves or honey with any berries
  2. Melted butter, you can dip pancakes in it and wash it down with sweet tea with lemon, like in childhood
  3. Mix ripe banana with cottage cheese, add a little honey and spices to the mixture and wrap it in pancakes
  4. Apples can be peeled, cut into small cubes and sautéed in a frying pan in butter with spices (cinnamon, nutmeg) and sugar for 5-7 minutes - this is the most delicious filling for pancakes!

  • Sugar - 1 tbsp;
  • Salt - a pinch;
  • Vegetable oil - 2 tbsp.

1. Take a deep cup and sift the flour over it.

5. Next, take a ladle, scoop out the required amount of dough, pour it into the pan around the entire circumference. When the first side is browned, lift it with a spatula and flip it over. Cook for another minute.
