At the very end of kneading the dough, add soda. There is no need to extinguish the soda, because... The dough contains enough yogurt, which can easily extinguish the soda and make the manna fluffy. Mix the mixture with a spoon and place in the oven.

There is no need to hold the dough for a long time, because... the porosity of the product will decrease.

Grease a baking dish with vegetable oil and pour in the dough.

One winter evening, when I suddenly ran out of cookies, eggs and butter, and didn’t want to go to the store, I decided to bake something delicious. What can you bake without eggs and butter? For example, manna with kefir! It does not need eggs, but kefir, semolina and sugar are available. But what about butter, which you don’t need much for the dough, but still 100 g? What if you take sunflower instead? After all, it is known that fats in baked goods are interchangeable. Butter and vegetable oil can be replaced with one another in both yeast and cake dough, this practically does not affect the taste - and you cannot tell what kind of butter is in this pie. Now we will check it!

The experiment was a success. The manna in vegetable oil turned out to be crumbly and fluffy, tasty and beautiful. So I recommend it if you also don’t feel like going to the store at night. In general, manna is a very unpretentious recipe, the products there vary as you please: kefir can be replaced with milk; flour - semolina, soda - baking powder, and add everything to the filling, from berries and fruits, fresh and dry - to chocolate, poppy seeds and nuts.

You should take a little less sunflower oil than butter, since butter contains 80% fat, and vegetable oil – as much as 100%. Therefore, we take about ¼ less vegetable. And also, refined vegetable oil should be added so that the cake does not smell of it - unless it is a specific recipe such as pizza or focaccia, where the aroma of olives is simply necessary.

Ingredients:

  • 1 glass of semolina;
  • 1 cup flour;
  • 1 glass of kefir;
  • 1 cup of sugar;
  • 0.5 cups refined sunflower oil;
  • 1 teaspoon of soda (without top);
  • A pinch of salt.

Attention! I took 100 ml of sunflower oil, and the opinions of the tasters were divided: half of the household said that the pie was very tasty, and the other half said that it was too fatty. Therefore, I advise you to take less oil - 70-80 ml, and accordingly increase the amount of liquid ingredients, that is, you will need 20 ml more kefir.

This time I decided to add chocolate drops, white and black, to the pie. You can just finely chop the chocolate. The pieces melt in the pie and turn out very tender and tasty!

As usual for preparing semolina, pour kefir into the semolina in advance. You can do it for half an hour, you can even overnight (if you put it in a cool place).

When the kefir is absorbed into the cereal, add a spoonful of soda and mix thoroughly so that the soda is evenly distributed in the dough. Reacting with a fermented milk product, it creates fluffiness.

Now add sugar, salt, and a little vanilla if desired, and mix.

Add vegetable oil and mix well again.

Sift the flour and knead the dough.

Add a handful of chocolate chips to it and mix.

We grease the mold with vegetable oil (and this is where it came in handy; usually for semolina I grease it with butter and sprinkle it with semolina - but sunflower oil will help out in this case too), and lay out the dough.

Place the mannichek in the oven, preheated to 180C, and bake for about 30-35 minutes, until the skewer is dry and golden brown.

Turn the finished pie directly with the mold onto a dish, cover with a towel and leave for 5-7 minutes. After standing, the manna will easily come out of the mold. And if it doesn’t want to, then carefully pry up its edges with a knife and try again.
